Too tired to drive, too wired to sleep. I made this up last night for a story, and tested it this evening:

A Savory Squash Casserole

4 slices bacon
1.5 pounds yellow crookneck squash
one large tomato
4 oz crumbled blue cheese
two eggs
a sploosh of lemon juice
one or two cups of bread or cracker crumbs
black pepper to taste

Preheat oven to 400 F.

Cut bacon into bits and fry until almost-cooked. Pour bacon and grease into square 8-inch pan or equivalent. Smoosh bacon and grease around so that sides are oiled.

Grate squash and chop tomato. Toss into pan and mix with the bacon.

Add blue cheese, mix some more.

Beat the eggs. Add them and the lemon juice to the pan, mix some more.

Stir in bread crumbs bit by bit until mixture is merely mushy rather than soggy (i.e., no runny spots; the veggies will ooze more liquid as they bake, so opt for more dry than not if in doubt). Add in black pepper to taste. Level mixture so that it is spread evenly across the pan. Plunk in oven and bake for 45 minutes.

*grins* How cool is it that you made up a recipe for your writing, then went home and made it? I'm in awe. Of course, I'm in awe of anyone who cooks at all, since usually my efforts (when I'm not trying to cover the world in Christmas cookies) consists of opening up the microwave and pulling plastic off.

Cooking I can do. However, I'm inexplicably pathetic at dealing with dead animals or live power tools -- and I'm probably the only person under forty who's forgotten how to ride a bike and program a VCR -- so I figure some sort of cosmic tradeoff took place when I acquired that skill set.

Plus, my lunch today is probably going to be a microwavable pizza, so I'm in no position to sneer at convenience food. ;-)

I can't help but love anyone who uses "sploosh" as a cooking measurement. *grin* I'm the one who gives people fits when they ask for a recipe, since mine usually end with "cook in hot oven until done."
